What do you do when you have a serious sweet tooth but you don't have any sweets in your house? Work with what you've got people! I got a little creative with a bag of popcorn and whipped up this creation that I've been thinking about ever since. You can eat it for breakfast (since it's inspired by a popular breakfast pastry) or dessert, or both -- live life on the edge people! Get the recipe below and make this fancy popcorn for a special treat or gift.
Cinnamon Roll Popcorn
1 bag natural popcorn (unsalted, unbuttered), popped
3 tablespoons butter, melted
1 tablespoon ground cinnamon
1 cup white chocolate chips, melted
1/4 cup chopped pecans (optional)
Additional ground cinnamon
Directions
Place popcorn in a large mixing bowl. Combine cinnamon and butter and slowly drizzle over popcorn.
Slowly drizzle white chocolate over popcorn while gently stirring (be careful not to crush popcorn.) Fold in pecans.
Line a large baking sheet with parchment paper and spread out popcorn mixture on the paper. Sprinkle additional cinnamon over the top. Place the baking sheet in a cool place to allow the chocolate to harden for at least 15 minutes. Place popcorn in a serving bowl and break up larger pieces with your hands. Grab a cup of coffee and dig in!
Popcorn can be stored for 2-3 days in an airtight container.
