Whenever I'm planning my meals for the week, I tend to think primarily about the main protein and how to mix that up, rather than side dishes to accompany it. I usually end up in a rut of just making a quick salad and a sweet potato to go along with it, but sometimes you just want something different! Peas sautéed in a little olive oil with crispy bacon and sweet onions, and then finished with a fresh squeeze of lemon is quick and easy, but a totally flavorful option -- and it works well with almost any protein!
Sautéed peas with bacon and onions
3-5 slices of bacon
2 tablespoons olive oil
1/2 medium onion, thinly sliced
1 package of frozen peas
Juice of 1/2 lemon
salt and pepper
In a medium sauce pan or large skillet, fry bacon until crisp. Remove bacon and drain on a paper towel.
Leave approximately one tablespoon of bacon rendering in the pan and drain the rest. Add the olive oil to the pan and put on medium-high heat. When oil is heated add the onions and cook until soft.
Add the frozen peas and bacon to the onions in the pan and stir to coat peas with olive oil. Cover pan with a lid and reduce heat to medium. Cook until the peas are warmed through, approximately 3-5 minutes.
Before serving add lemon juice, and salt and pepper to taste.
