Who loves meat wrapped in lettuce? This girl!
Unfortunately, the ones you order at the restaurants tend to be loaded with calories and sodium, which is no bueno. PF Changs lettuce wraps? 630 calories. Cheesecake factory? 1,536 calories. WHAAAT?!?! That's my entire caloric intake for the day!
So, what's a girl to do when she's craving some lettuce wraps but doesn't want to sacrifice her waistline? Make them at home!
Asian Style Chicken Lettuce Wraps
1 lb ground chicken breast
1/2 onion, minced
1 tsp salt
1 tsp pepper
2 garlic cloves, minced
1 Tbs of ginger, minced
2-1/2 Tbs soy sauce
1 Tbs + 1 tsp rice vinegar
1 Tbs sesame oil
1 Tbs peanut butter
1/2 Tbs water
1/2 Tbs honey
1 Tbs Sriracha
1/2 cup water chestnuts, drained & chopped
3 green onions, chopped
2 Tablespoons sesame seeds
12-15 leaves of bibb, boston or green-leaf lettuce, rinsed and dried
1. Heat a large, non-stick skillet on high. Add chicken, onion, salt, pepper. Cook until chicken is nearly done, stirring often to break up the meat. Add garlic and ginger then continue cooking until chicken is cooked through.
2. In a microwave safe bowl, combine soy sauce, rice vinegar, oil, peanut butter, water, honey, and sriracha. Microwave 20 seconds, then stir until smooth. Add into the skillet and stir to combine.
3. Reduce heat to medium and add water chestnuts. Cook for another 2-3 minutes to let water chestnuts warm and the sauce reduce slightly.
4. Remove pan from heat. Sprinkle green onions and sesame seeds to the chicken mixture.
5. Plate warm chicken filling on top of lettuce leaves and serve. Fill those leaves as much as you can, the more filling the better!
