I heart sweet potatoes, and I heart soup. Therefore I just had to make this soup (per usual, it was inspired by a recipe found on Pinterest: Sweet Potato Soup)
It's very simple really and very very flavorful.
Sweet Potato Soup with Chicken and Avocado
1. Take a few sweet potatoes (I had three medium-sized ones on hand) wrap them in tin foil and bake them until they are soft and oozing sugary goodness.
2. Peel the sweet potatoes and put pulp in a stovetop pan with one can of coconut milk and one cup of chicken broth.
3. Turn stovetop on medium low heat to keep warm.
4. Add half of a teaspoon of chipotle powder, the zest of 1/2 lime, salt and pepper to taste (I think I threw in a little garlic powder too)
5. Use an immersion blender (or regular blender) to combine all ingredients.
6. Ladle soup into a bowl and add 1/2 of a chopped avocado, some pieces of chicken torn from a rotisserie chicken, and a dollop (yes, exactly a dollop) of sour cream on top. I also squeezed a little lemon or lime juice on top of it all for good measure.
7. Try not to lick the bowl.
