The Last Supper...Before Sandy

We weren't really sure what to expect from Hurricane Sandy, turns out, we were graciously spared from her wrath in our neighborhood of Philadelphia. However, in preparation for the storm I thought I would cook up a big dinner and hopefully have some leftovers that we could dig into if we lost power. 

Whenever I'm in need of a real rustic home-cooked meal, I turn to a great recipe for braised short ribs (courtesy of Bon Appetit magazine) made in the slow-cooker. Also, I whipped up a cauliflower mash and brussels sprouts with bacon and onion. AND since we had picked up a bag of apples from the orchard - purchased during our quest for cider doughnuts, I thought I might as well make some apple crisp to wash it all down.

Braised Short Ribs Tutorial: 
Step 1 - season short ribs with salt and pepper and layer in the crock pot. I used a mix of bone-in and boneless (because of what was available at the grocery store).

Step 2 - Pile diced onions, diced tomatoes in juice, mushrooms, garlic cloves, parsley and bay leaves on top. Pour in red wine (drink some while you've got the bottle open...you might as well). 

Step 3 - Wait. This is after four hours in the crock pot. 

Step 4 - After 8 hours, take meat and mushrooms/tomatoes out of the crockpot using a slotted spoon. Spoon off fat layer in crock pot and then pour the remaining gravy over the meat. Then EAT. 

Mashed Cauliflower Tutorial:
Step 1 - Boil cauliflower until softened. 

Step 2 - Put in mixing bowl with roasted garlic, butter, milk, and salt and pepper. Mix all ingredients with a hand blender, immersion blender, or by hand. 

Step 3 - Pour into a casserole dish. I usually put mine in the oven to keep it warm and firm it up a bit. You can just eat it after the mashing step if you choose.

Roasted Brussels Sprouts with Bacon and Onion Tutorial:
Step 1 - Trim ends off of brussels and cut in half. Toss brussels with olive oils, diced onion and pre-cooked bacon crumbles. Spread out on a baking pan and sprinkle with salt and pepper. 

Step 2 - Cook for 30-40 minutes at 350 until softened.

Apple Crisp Tutorial
Step 1 - Peel and slice apples, squeeze lemon juice over apples to prevent browning and sprinkle with sugar and cinnamon. Toss all ingredients together in a bowl and then transfer to an ovensafe dish. 

Step 2 (no picture shown) - Mix brown sugar, old fashioned oats, cinnamon and flour together. Slowly combine with softened butter. Sprinkle topping over apples. 

Step 3 - Bake at 375 for 60 minutes or until bubbling. Wait 10 minutes before serving (even though it will seem impossible to do).

Also, since this was basically a doomsday dinner, I decided to get a little fancy and set the dinner table for us. 


All in all the meal was delicious and we were so grateful that we never lost power during the storm. 

We know a lot of other people around Philly and at the Jersey Shore that are still dealing with power outages, flooding and wind damage, and we are keeping you all in our prayers!
